Plant-Based Food Finds A Home In Horizon West
From its very conception, Humbl has been more than a restaurant; it’s been a movement. The plant-based food movement is taking the population by storm with no signs of slowing down as awareness increases. People are learning more about the health and environmental benefits of increased consumption of foods derived from plants, nuts, seeds and legumes which has resulted in a 600% increase in plant-based enthusiasts according to a survey done by GlobalData! Humbl’s driving desire is to create a community of people who share their passion for plant-based and strive to make the world a better place, one meal at a time.
In The Beginning...
Paul Mascia, co-founder of Humbl, started exploring the notion of plant-based eating to lose weight, secure a healthier future and feel better overall. After experiencing for himself the positive impact a plant-based diet can have, Mascia, a lawyer and venture financier by trade, began searching for an opportunity to take plant-based eating from niche to mainstream.
Mascia began researching West Coast concepts that were in line with the principles he hoped to reproduce here in Central Florida. His goal was to be part of the early innings and as he began to pull in pieces and connect with people who were in line with his vision and mission, a foundation began to take shape. A major move in concept development was partnering with Eric Koeser, who also adheres to a plant-based lifestyle and who was key in the Burger Fi model branding.
A Cut Above The Rest
The duo identified that a major component of their brand would be driven by an impeccable menu. So, began the search for the perfect chef. Enter culinary heavy-weight, Matthew Kenney , a two-time James Beard nominee and Food & Wine’s Best New Chef in 1994. Kenney has been at the forefront of the plant-based movement for more than a decade with an empire of vegan restaurants, cookbooks, catering and a school dedicated to teaching culinary students the art of plant-based cooking.
Moved by the passion of the Humbl team, Kenney took on the position as head chef and began to craft what would become a menu unlike any other in fast-casual concepts. Locally sourced ingredients, artisanal presentation and a dedication to serving food that people recognize and relate to while honoring the principles of plant-based food are what set Humbl’s menu apart.
What’s On The Menu?
While the goal is to become a national brand, the founders of Humbl decided to begin the journey right here in Horizon West, bringing plant-based food in the form of familiar favorites to the community. The restaurant will feature food that we’ve seen time and time again, completely reinvented. Pizza, burgers, fries and milkshakes are menu staples, all made without any animal products or by-products. Other options will include a Grab n Go section, a juice and natural soda selection and a collection of Kombuchas.
A Meal With A Mission
As if the menu itself weren’t enough to wow guests, the founders have included a humanitarian component that is the cornerstone of the Humbl mission. For every meal purchased, a meal will be provided for a child in need. Humbl not only aims to make plant-based eating familiar and accessible, it also wants to make an impact in a very real way. Humbl has partnered with Second Harvest Food Bank to decrease hunger locally and also with Kids Around The World to have a global impact as it continues to grow and expand.

All merchandise sold in Humbl locations is made by survivors of human trafficking in Cambodia through the Agape International Mission , founded by Don and Bridget Brewster. In every facet of its existence, Humbl has included an outreach component that makes it possible for each guest to do more than just dine. Each guest can make a difference just by enjoying a meal.
