HUMBL Builds Healthy Habits, One Meal at a Time!

Live life well fed with plant-based familiar favorites.

HUMBL is the first ever plant-based fast casual restaurant and it's right here in Horizon West! We chatted with cofounder Eric Koeser and onsite lead chef, Kristi Caruana to get to the heart of what that means and what you can expect with a visit to HUMBL.


Whether it's your first visit or you are a regular patron, there's always something new to try and something familiar to enjoy.

How did your team come up with the concept for Humbl?

The concept was originally created by chef Matthew Kenney; a world-famous vegan chef, two-time nominee of the James Beard award and winner of Food + Wine Magazine’s Best New Chef. 

He’s one of the elites in the vegan community and a highly respected culinary creator. This was his first fast casual concept. Most of his restaurants are fine dining in major metropolitan areas such as Paris, Japan, New York and LA. 


We approached him about the idea of bringing plant-based food to the everyday person. What we wanted to do was make something unfamiliar- plant based food- familiar. Pizza, cheese, burgers, and so much more beyond the typical go-to salad that every vegan or plant-based eater gets stuck with at fast casual restaurants. 


Why did you decide to launch in Horizon West?

We live here! Our entire team is local. We are all residents of the community. What better way to serve our community than to bring healthy dining to our own backyards? 


We knew from the very beginning that our first restaurant would be here at home. The idea that Horizon Westers can have world-class food at fast casual prices, right here is what HUMBL is all about. If we could deliver the very best to people all over Central Florida, starting at home would have so much meaning to us. 


No matter which village you live in, you are a 10-15 minute drive away from HUMBL and delivery is available to you. 

What makes HUMBL so unique?

It’s really all about accessibility. 


Our motto is “Life Well Fed”. Bringing plant-based food from fine dining to fast casual was the key to ensuring availability in our everyday lives. We offer delivery and takeaway as well so in the midst of a busy and changing world, you can still enjoy healthy food at your own comfort level. Not everyone is open to trying something new, especially when it comes to food. That was top of mind in every aspect of the creation of this concept.

Why are you passionate about plant-based food?

The diverse benefits to overall health in relation to a plant-based diet really made an impact on our decision to move forward with this project. We realized that we could make changes by switching animal products for plant products that are sustainable to afford long term wellness and health that is built into your daily life. 


Our hope is that these changes pave the way into new generations. So many studies have shown that making even small moves to plant-based products aid in eliminating a variety of chronic illnesses. When we move away from lifelong bad eating habits, we look better, we feel better and we do better. You can have what you’ve always had in a healthier and better way. 


You don’t have to give up anything!

Pizza, burgers, pasta, milkshakes, ice cream and so much more!  


Everything you already know and love is available to you at HUMBL. Every item on the menu was designed with you in mind. We want every guest who walks in the door to feel comfortable ordering anything on the menu. 


People grow up eating the All American diet and to villify that would do more harm than good. Instead, we decided to take the very things people love the most about American food and make them healthy and delicious!

How was your menu crafted?

At HUMBL, our passion is to encourage a healthy lifestyle by way of healthy eating habits. We believe that you don’t have to sacrifice flavor, taste, quality and familiarity for the sake of “health food”. 


You can have the best of both worlds and enjoy all the items you would normally eat! That’s really the crux of our menu. If we can better ourselves, each other and the world around us through high-quality, sustainable dining then we are succeeding in our mission. 


Every item was carefully crafted. We built and rebuilt the menu over and over again to find the perfect flavor profiles. We are dedicated to providing and producing the highest quality food possible. We also work hard to ensure that every aspect of our process is engineered with sustainability in mind.
